Gather all your ingredients

Step 1. Soak kidney beans in about 2 cups of water overnight

Step 2. Cut 1/2 a white onion Into quarter pieces, add to the soaked kidneys beans and place them on the stove. Cook over medium heat. Stir occasionally, place lid over them until beans are soft.

Step 3. In another pot add the Sliced kale, tomatoes, Corn and purple onion. Place The mixed ingredients over Medium heat and add some Extra virgin olive oil then mix It together until softer.

Step 4. Add the vegetables to The cooked beans and stir to Mix them evenly. Let it cook Together and add some pepperAnd salt (and cayenne pepper if Desirable)

Serve as desired with sour cream, avocado, chips, cheese or any other toppings and ENJOY! :)
