I did both of the salads at the same time so the pictures reflect that. These recipes can be altered for the crowd you have.
Chop half a red pepper, try to keep the sizes uniform in size.
I used yellow peppers as well, personally I like the way red and yellow bell papers taste better than green ones.
In a separate bowl add chopped onions to the peppers you set aside.
Chop the artichoke hearts and sundried tomatoes smaller than bite-sized.
Boil salted water and add pasta and then drain and let cool for at least a half an hour.
Drain the two cans of tuna and add it to a bowl with the pasta.
Add two tablespoons of mayo to the bow tie pasta. I'm not a fan of wet pasta salads, but adjust this measurement for your tastes.
Add your onion and pepper mix.
Add salt, pepper and celery salt to taste. Then add 2 tablespoons of relish.
Mix well and cover in the fridge. Since this has mayo in it, make sure to keep the salad on ice while it's outside for your party.
Add the artichoke and sundried tomato mix to your other noodles.
Use these two dressings, they are olive oil and balsamic vinaigrette based.
Add a good pour of each dressing and then mix well. I eyeballed the dressings so there isn't an exact measurement here.
Mix well and chill this until you are ready to serve.
